If you’re looking for a little bit of Texas in the Valley, make your way to Hailey’s Cowboy Cocina.

Celebrating its second anniversary on June 1, 2010, the Cowboy Cocina is Hailey’s best bet for casual dining for families and groups. In summertime, it’s also “The Spot” for casual outdoor eating in the south Valley. All summer long, there’s plenty of room in the courtyard at Hailey’s hip new Meriwether Building, right in the heart of downtown.

For an efficient business lunch in Hailey, the Cowboy Cocina will always impress. And for friends looking to catch up, do it under the sun.
The Cowboy Cocina, owned by true Texans, Dick and Chris Lemon, offers a wide menu of casual cowboy options including Big Grub like a Blaine County Burger with grilled jalapenos and onions and cheddar cheese; Catfish Platter with black beans and sweet potato fries and the always-hearty Chicken Fried Steak. Also Tex-Mex favorites like tacos, quesadillas and nachos. Out-on-the-prairie salads include a Marinated Chicken Salad and a Taco Beef Salad with Texas Pico de Gallo. For something different, try the Spinach Salad with bacon, red onion, hard-boiled egg, tomato and deviled pecans.

Daily specials are constantly changing. Catch a pulled pork sandwich, steak tacos and cowboy caviar. And unlike so many casual lunch and dinner spots, the Cowboy Cocina makes plenty of their dining options from scratch including soups, their ranch and honey mustard dressings, hot sauce and traditional guacamole.
